澳門:食八方 - 北廚,南苑新食府

澳門美高梅MGM Macau的食八方早前重新裝修,並以新概念為題,將餐廳分成北廚及南苑兩邊,兩邊也融入澳門藝術家Victor Marreiros的作品,更添餐廳個性。並由黃永晶師傅主理菜式,北廚裝飾設計以北京四合院為題,主打北京、東北、湖南、山東、上海、四川、新疆及浙江等地的菜式,更有餃子、煎餅及即席拉麵,滿足愛吃北方美食的客人。南苑主打廣東菜,名爐燒味、點心、粥及小炒,加上是二十四小時營業,為客人全天提供美食。不論是辣菜或是廣東燒味、點心或小炒,菜式選擇豐富,而且喜歡吃,所以一個月內已經來訪餐廳五次用餐。




南苑主要供應廣東菜,燒味、點心、粥及小炒,而且還是二十四小時營業,晚上餓了又可來吃宵夜。至尊燒鵝,Roasted Goose served with Sour Plum Sauce,MOP$145,玫瑰蜜汁叉燒,Barbecued Pork with Honey Sauce,MOP$100,新竹出爐的燒鵝很有水準,皮脆泛着鵝油光澤,入口酥脆不韌,肉又香,而肥瘦叉燒更深得我心,蜜汁香甜,又帶焦香,肉腍又肥美。


食八方狀元海鮮粥,Supreme Seafood Congee,MOP$140,三元及第粥,Sliced Pork with Tripe & Meat Balls Congee,MOP$50,荔灣艇仔粥,Shredded Goose with Pork Skin,Jelly Fish & Squid Congee,MOP$50,香脆炸油條,Deep-Fried Dough Stick,MOP$10,粥品也很推介要吃,廚師團隊曾在新葡京的粥麵莊工作,所以粥品出品出色,粥夠綿香,材料又足,好像海鮮粥,有蟹有蝦還有鮑魚,配上既炸又好吃的油條,是最佳的早餐之選。



蟹籽滑燒賣,Steamed Pork & Crab Roe Dumplings,MOP$45,金銀蒜陳村粉蒸排骨,Steamed Pork Ribs with Crystal Noodles & Garlic,MOP$50,金蒜蝦春卷,Crispy Fried Shrimp & Garlic Spring Rolls,MOP$40,點心通常都吃燒賣及排骨,另外還有蘿蔔糕、鳳爪、珍珠雞、叉燒包等等。


南苑的冷盤小吃有薑蔥雞絲海蜇,Marinated Shredded Chicken & Jelly Fish with Ginger & Spring Onion,MOP$55,蔥油蟲草花黑木耳,Fresh Cordycep Flower Salad with Black Fungus Tossed in Scallion Oil,MOP$40,XO醬花枝片,Marinated Cuttlefish Tossed in XO Sauce,MOP$80,海蜇夾著薑蔥雞絲口感豐富,黑木耳十分爽口,而花枝薄片辣香開胃。


小菜類別,個人必點鳳梨草莓咕嚕肉,Sweet & Sour Pork with Pineapple & Strawberry,MOP$65,外脆肉腍,酸甜汁味道恰好。還有甜菜梅菜扣五層肉,Steamed Pork Belly with Preserved Vegetables,MOP$70,香脆椒鹽鮮魷,Stir-Fried Salted Pepper Squid,MOP$90,鮮魷炸得金黃香脆,炸漿夠薄,魷魚腍而不韌,椒鹽味道濃郁。


北廚主打北京、東北、湖南、山東、上海、四川、新疆及浙江等地的菜式,更有即席拉麵,滿足愛吃北方美食的客人。多款辣菜選擇,先有老城都麻辣醬白菜,Chilled Marinated Baby Cabbage with Sesame Sauce,MOP$40,雙流地道水煮桂花魚片,Poached Perch with Garlic Chilli Sauce,MOP$180,水煮菜式可配桂花魚及黃鱔等,但選桂花魚最好吃,肉挺實又嫩滑,單香紅油已知辣香十足,麻香俱備,浸在底下的薯粉吸滿辣汁,愛辣者更不能錯過。還有辣子雞,Wok Fried Spicy Chicken,MOP$90,干鍋花菜,Work Fried Cauliflower with Pork & Dried Chilli,MOP$90,及北館秘製油潑扯麵,Shaanxi Flat Noodles Tossed with Garlic,Chilli & Soya Sauce,MOP$70,鐘情於花菜及辣麵,扁身的闊麵條充滿彈性,彈牙有咬口,加上辣油混遍麵條,晚飯期間大家也說即使再飽也可要吃油潑扯麵。回鍋家常臊子海參,Braised Sea Cucumber with Bamboo,Minced Pork & Spicy Sauce,MOP$200,本幫響油鱔魚,The Oil Ring Eel,MOP$100,原來海參的菜式辣度不淺,令海參吃起來更加惹味。






北平韮菜鮮肉水餃,Pork Meat & Chive Dumplings,MOP$55,東北鮮肉酸菜水餃,Pork Meat & Cabbage Pickle Dumplings,MOP$55,燕京濃湯大白菜餃子,Pork Meat & Cabbage Dumplings in Supreme Broth,MOP$55,自家包製的水餃,外型飽滿,餡粒豐足,不論是韮菜或是酸菜都多汁美味,但個人更喜歡吃燕京濃湯大白菜餃子,湯頭鮮甜,更突顯肉餡鮮味。



最後甜品一定吃京城驢打滾,Glutinous Rice Dumplings Filled with Red Bean Paste Stuffing,MOP$30,這老北京宮廷點心,黏糯的糯米皮包捲著豆沙蓉,豆香餡甜,入口軟綿,口味無窮。
