早前來台北工作,完成工作後跟朋友來到位於Hotel Proverbs Taipei 賦樂旅居的TK Seafood & Steak吃晚餐。踏進餐廳,樓高三層的環境,加上八盞奧地利水晶燈,空間感十足,氛圍充滿情調。餐廳主打牛扒及海鮮,主廚Louis江潘維喜愛用台灣食材來烹調,更設有自家農場種植蔬果入饌,其中餐廳招牌菜是180天牛油包覆乾式熟成牛排。








點餐後,新鮮焗起的麵包及精緻的餐前小食送上,麵包香而鬆軟,沾上油醋吃,簡單而可口。五道菜的晚餐,價錢視付客人選擇甚麼主菜。即使選最貴的T骨牛扒,二人價錢是七千多台幣,也非常合理。


第一道菜有三款選擇,剛好每人選一個,來一起享用。Arugula Salad with Litchi,Red Wine Candied Litchi,Burrata & Truffle Dressing,芝麻葉沙律配荔枝、紅酒燉黑葉荔枝、水牛芝士及松露油醋,以紅酒煮荔枝,味道香甜,加上酸酸的油醋,十分開胃。Pink Shrimp Tartare with Burrata,Sliced Asparagus,Quinoa & Tomato,甜蝦他他配水牛芝士、蘆筍薄片、藜麥及蕃茄,選用台灣大蝦來做他他,配新鮮的水牛軟芝士,混勻來吃令蝦肉很滑溜。Octopus Wrapped in Shiso with Cucumber,Wen-Chiu Pineapple,Baby Greens,Rosemary Bread Crumbs & Tomato Vinaigrette,紫蘇章魚捲配小黃瓜、文取鳳梨、嫩葉沙律、迷迭香麵包酥及紫蘇蕃茄油醋,把章魚包上紫蘇葉及豬網油,再煎香,章魚肉帶彈性,而且香氣十足。



第二道是湯,有兩款選擇,Poached Grouper with Seasonal Vegetables,Okra & Veloute de Poisson,泡煮石斑魚伴季節時蔬、秋葵及白魚湯醬汁,Clams & Luffa Soup with Ginger Foam,蛤蜊絲瓜湯伴薑汁泡沫,兩款湯中比較特別的是蛤蜊絲瓜湯,這本來是一道台菜,但大廚把它重新演譯,將絲瓜打蓉再過濾後,加入蛤蜊高湯及蝦米熬煮,最後放上由薑汁及奶油製成的薑汁泡沫,喝起來湯很鮮甜,感覺是濃縮版的傳統蛤蜊絲瓜湯。


第三道是海鮮,Grilled Boston Lobster with Brown Butter,烤波士頓龍蝦伴焦化奶油(半隻),Grilled Matsu Oyster,烤馬祖生蠔(半打),Seared King Prawn with Hokkaido Scallop,Clams Puttanesca & Gremolata,香煎明蝦與日本北海道帶子配蛤蜊、煙花女醬及意式風味香料油,吃海鮮最重要是新鮮,用上新鮮的龍蝦、生蠔、大蝦及帶子來烤,最喜愛的是那配龍蝦的牛油汁,令鮮味倍增。


主菜選了USDA Prime Grain-Fed Sirloin,美國穀飼頂級沙朗牛扒,NT4880,以西班牙JOSPER爐去炭烤,出爐前再用波本威士忌酒廠 JACK DANIEL’S 白橡木桶木屑浸濕燻烤,令牛排帶燻香,肉質嫩紅又腍,肉香濃郁,非常好吃。14 Days Dry-Ahed Yilan Duck Breast with Asparagus,Watercress & Roasted Tangerine,14天乾式熟成宜蘭櫻桃鴨胸配烤蘆筍、水田芥及烤柑橘,NT2580。大廚選用重2.5到3公斤的宜蘭櫻桃鴨,再經過14天熟成,令鴨肉味道更濃,經烤煮後鴨肉粉嫩,加上由新鮮龍眼、紅酒醋及鴨骨熬成的汁料,酸中帶甜,平衡鴨肉味道。Josper Grilled Threadfin with Pickled Chilli,Pine Nuts & Grapefruit Salsa,Josper烤午仔魚一夜干配漬辣椒、松子及西柚莎莎,NT2380。JOSPER烤午仔魚一夜干配漬辣椒、松子、西柚莎莎」,午仔魚去骨後以鹽及糖醃漬再風乾一晚,然後用JOSPER烤箱高溫燻烤,皮脆肉嫩,加上汁料帶微辣,其實挺惹味。



最後甜點,Wen-Chiu Pineapple Flambe with Vanilla Macaroon Crumble,Mint,Lemon Rind & Cream,文取鳳梨燒配香草馬卡龍酥、薄荷、檸檬皮及鮮奶油,侍應會在客人面前烹煮甜點,把⽂取⾦鑽鳳梨泡在琴酒,使酒香與果甜融合,再加入奶油及鳳梨汁慢煎及燒香,甜甜的鳳梨令人回味。
